Preheat oven to 400˚. On a tray, drizzle the sprouts with olive oil and season with salt and pepper. Roast until browned slightly - about 20 minutes. Shaking occasionally to ensure even roasting.
Meanwhile, make salad dressing by combining all ingredients in a jar and shake to combine. Chill until needed.
Combine salad ingredients in a large bowl and add 1/4C dressing. Mix until combined. Season with additional salt and pepper if desired.
