Prawn and Sausage Cioppino

In Dutch oven, heat extra virgin olive oil over medium high heat…add fennel, garlic and shallots, 1/2 tsp salt and 1/4 tsp pepper. Cook until veggies slightly softened - 5 minutes. Add sausage and break up with a wooden spoon. Cook until brown (5 minutes). Add wine and scrape the tasty bits off the bottom. Add in tomato paste, chicken broth and a bay leaf. Bring to a simmer and cook covered for 10 minutes.

Uncover and add prawns, beans, basil and thyme. Simmer uncovered until prawns are pink - 5 minutes. Remove the bay leaf and add in 1/2 tsp salt and 1/4 tsp pepper or to taste. Serve with crusty bread and more wine!
