Grilled Swordfish with
Lemon, Mint and Basil

Preheat grill on medium high.  Whisk lemon juice, olive oil, basil, garlic and mint together in a small bowl.  Season with salt and pepper to taste.  Set aside.

Pre-oil the grill to prevent the fish from sticking.  Brush the fish with 2 tbsp of the lemon olive oil mixture.  Grill the steaks until just cooked through.  About 5 minutes per side. Transfer steaks to platter, cover with tin foil and allow to rest for 5 minutes. Drizzle remaining sauce and serve.

Recommended accompaniments: Rice Pilaf and Corn and Black Bean Salad.
